Chocolate Covered Cherry Cookies

The only thing better than a chocolate covered cherry is a chocolate covered cherry cookie. This recipe is sure to be a hit with kids and adults alike.

What you’ll need:

  • 1 1/2 cup flour.
  • 1/2 cup unsweetened cocoa powder.
  • 1/4 teaspoon salt.
  • 1/4 teaspoon baking powder.
  • 1/4 teaspoon soda.
  • 1/2 cup butter - softened.
  • 1 cup sugar.
  • 1 egg.
  • 1 1/2 teaspoon vanilla extract.
  • 10 ounce jar of maraschino cherries.
  • 1 cup dark chocolate chips.
  • 1/2 cip sweetened condensed milk.

In large bowl - mix flour, cocoa powder, baking powder and soda. In mixer bowl - beat butter and sugar on low until fluffy. Add egg and vanilla, beat well. Gradually add dry ingredients into
butter/sugar/vanilla/egg mixture; beat until well blended. Shape dough into one inch balls and place on an ungreased cookie sheet. Press down center of ball with thumb.

Drain cherries, reserving the juice.

Place a cherry in the “thumb indent” on each dough ball.

In small saucepan combine chocolate chips and sweetened condensed milk - heating until chocolate is melted. Stir in 4 teaspoons of cherry juice. Spoon about 1 teaspoon of chocolate over each cherry. Bake in a 350 degree oven for 10 minutes.
