Salmon Loaf Recipe

This Salmon Loaf recipe was one of my grandmother’s favorites. Salmon loaf tastes great served with seasoned rice and fresh steamed vegetables. It doesn’t take long to prepare, either.

What you’ll need:

  • 2 eggs - beaten.
  • 1 small can of evaporated milk.
  • 1 small onion, chopped.
  • 1 can of salmon.
  • 12 crushed saltine crackers.
  • Salt, pepper or other seasonings to taste.

Put crushed crackers into a medium mixing bowl. Pour in evaporated milk and eggs. Set aside until crackers are moistened. Mix in salmon and onions until well blended. Add seasonings to taste. Grease a loaf pan with butter or cooking spray and put mix into loaf pan. Bake in a 350 degree oven until done.
