Scalloped Zucchini Recipe

Looking for a side dish that hasn’t been served a million times on your dinner table? Then be sure to give this scalloped zucchini recipe a try.

What you’ll need:

  • 2 pounds of cooked zucchini.
  • 1 pound browned bulk sausage.
  • 1/2 cup crushed saltine crackers.
  • 1/2 parmesan cheese.
  • 2 beaten eggs.
  • 1 teaspoon salt.
  • 1/8 teaspoon thyme.
  • 1/8 teaspoon garlic salt.

Mix all ingredients together in a casserole dish with 1/2 cup water or chicken broth. Bake in a 350 degree oven for 40 to 45 minutes.
