Vegetable Kebabs

One of my favorite summertime grill treats are Vegetable Kebabs. They are tasty, crunchy and nutritious.

Preparing them is simple and easy.

What you’ll need;

  • Metal or Bamboo Skewers. If using wooden or bamboo skewers, be sure to soak them in water for at least an hour before putting them on the grill, so they don’t burn.
  • A BBQ grill that is medium heat.
  • Red Peppers - Cut into about 1 inch squares.
  • Green Peppers - Cut into about 1 inch squares.
  • Whole Mushrooms - Cleaned and stems removed.
  • Red Potatoes - Washed and cut in half.
  • Yellow Squash - Sliced thick.
  • Onion - Quartered like an apple.

Put vegetables on the skewers and then brush with vegetable oil, worcestershire sauce, italian dressing or your favorite marinade. Place skewers on the medium grill 4-6 inches from the heat source. Cook for 5 minutes on each side until vegetables are lightly charred on the outside and tender crispy on the inside. Serve over rice or with BBQ Grilled Corn.
