Zucchini Casserole

Do you need a zucchini casserole recipe? Then you just happen to be in luck! Be sure to give this tasty recipe a try the next time you have zucchini on hand.

What you’ll need:

  • 6 cups shredded unpeeled zucchini.
  • 1 large onion, chopped.
  • 1 8 ounce container of sour cream.
  • 1 can cream of mushroom soup.
  • 1 package Herb Seasoned Pepperidge Farms stuffing mix.
  • 1 stick of butter.

Melt butter and mix with stuffing mix in a large baking dish. Boil zucchini in salt water until tender. Drain well; mix onion, soup and sour cream with zucchini. Pour mixture over dressing and bake at 350 degrees until golden brown.
